What you need for 3-4 servings
Skinless, boneless chicken breast 1lb (bite-sized nuggets cut).
Paprika 1tsp.
Onion powder 1tsp.
Garlic powder 1tsp.
Salt 1 tsp.
Cayenne powder (for spice adjustment) ½.
Black pepper powder ½.
Buttermilk 1 cup.
1 tsp hot sauce is optional, just for an extra spicy kick.
For breading
All-purpose flour 1 cup.
Cornstarch 1 cup.
Salt 1tsp.
Baking powder ½ tsp.
Paprika ½ tsp.
Garlic powder ½ tsp.
White pepper ½ tsp.
A pinch of cayenne pepper is optional.
For frying
Regular vegetable oil or peanut oil.
Steps to follow
Step 1:
Prep and marinate the chicken
Cut the chicken breast into uniform and bite-sized chunks for even cooking.
Mix hot sauce, cayenne powder, onion powder, garlic powder, black pepper, salt, and buttermilk in a large bowl.
In that bowl, add the cut chicken chunks and mix for coating.
Now cover and refrigerate it for at least 1 hour, or refrigerate it overnight for ultimate flavor and tenderness.
Step 2:
Making of dry coating
In a separate bowl, whisk together baking powder, cornstarch, flour, and all the spices listed above.
Step 3:
Take the marinated chicken from the refrigerator and press each chunk into the dry coating mixture.
Press firmly to improve coating adhesion.
Place the coated pieces on a tray and let them rest for 10 to 15 minutes to help them set and stick when frying.
Step 4:
Frying
Heat the oil in a deep pot to 375°F.
Dip the chicken chunks, but do not overcrowd the pan.
Fry for 3 to 4 minutes, and flip in between to achieve a crispy, golden brown on both sides.
Remove them and place them on a paper towel to absorb all the extracted oil.
